The most famous fish eggs in the world are those of sturgeon, a shark that lives in the sea but swims upriver to spawn; the more well-known and commercial are those of lumpfish.

Red lumpfish eggs do not exist, nor do red “sturgeon” caviar eggs. The red ones are actually salmon eggs, also called “red caviar“, due to some varieties that stand out for their intense color.

caviar, a typical food of Eastern Europe, is the product derived from the processing of sturgeon eggs.

White caviar is the most expensive in the world; it has a golden color and is extracted from adults (the older the fish, the lighter and more precious the eggs) and from albino fish. The most precious is the Iranian albino beluga sturgeon caviar, often called Almas caviar.
