I was gifted a beautiful box of cherry tomatoes, truly delicious, firm, and perfect for this recipe.

In fact, my advice is to use firmer, not overly ripe tomatoes for baking, which won’t release too much water during cooking.

Ingredients for two ramekins

  • 10.5 oz cherry tomatoes (your choice)
  • 6 tablespoons extra virgin olive oil
  • Half teaspoon dried oregano
  • 0.25 cup breadcrumbs
  • 0.75 oz cheese (grated)
  • 1 pinch fine salt

  • 1 Small bowl
  • 1 Ramekin
  • 1 Knife

  • 1 Colander

Steps

  • To make Microwave Gratin Cherry Tomatoes, first wash, dry, and cut the cherry tomatoes in half.

  • In each ramekin, form a base with two tablespoons of extra virgin olive oil and a bit of oregano.

  • Distribute the cherry tomatoes, cut side up, filling the entire base of the chosen ramekin.

  • In a small bowl, mix the breadcrumbs with the grated cheese and salt.

  • Distribute half of the mixture over each ramekin and add the remaining tablespoon of oil on top.
    You can add more oregano if desired.

  • Bake one ramekin at a time in the microwave, cooking the cherry tomatoes at 800W for 4 minutes.
