Despite the name, Biscuits and Gravy refers to a savory recipe.

They are not cookies (called cookies), but for Americans a kind of scones, similar to English muffins, topped with sawmill gravy.

Culinary historians trace its origins to the southern Appalachians in the late 1800s.

Biscuits can be made with wheat flour or yellow cornmeal, and sometimes they are enriched with cheese or other ingredients in the dough.

It is a popular breakfast especially in the Southern United States, spreading primarily during the War of Independence when food supplies were scarce.

Sawmill gravy, or white gravy or cream gravy, is a béchamel sauce made with meat fats, like sausage or bacon, or meat drippings from roasted or fried meats.

The fat is combined with flour to create a roux, and milk is generally used as the liquid to create the sauce’s creaminess, although cream is often added too.

Often seasoned with black pepper and sometimes with herbs and bits of meat like sausage or diced chicken liver.

Ingredients

  • 4 tbsp butter
  • 2 1/2 cups flour (wheat or corn)
  • 3/4 cup milk (or buttermilk)
  • 1 tsp baking powder
  • to taste salt
  • 14 oz sausage
  • 1/4 cup flour
  • 2 1/2 cups milk
  • to taste black pepper

Steps

  • For the “biscuits”: cut the butter, add the flour, milk (or buttermilk), and baking powder.

    Roll out the dough and use a pastry cutter to create circles 2 inches in diameter, 0.6 inches high.

    Place them on a baking sheet, touching edges, brush with milk and bake in a static oven at 392°F for 20 minutes.

    For the “sawmill gravy”: brown the crumbled sausage, set it aside and create the roux with flour and sausage fat (add butter if necessary) for 8 minutes.

    Add the sausage and, in a thin stream, the milk until it reaches a boil. Continue cooking for 15 minutes.

    Serve the biscuits topped or filled with the white gravy.
