- 2 zucchini (medium, about 2.5 oz each)
- 3.5 oz ricotta cheese (any kind you prefer)
- 1 pinch fine salt
- 1/2 tsp nutmeg
- to taste lime zest (grated)

Steps
To make Zucchini Rolls with Ricotta and Lime, first wash, trim, and slice the zucchini into very thin slices.
For this task, you can use a common vegetable peeler or a mandoline, being very careful.
Heat a grill for a few moments and place the zucchini slices on it, a few at a time, to manage the cooking.
Cook for one minute on each side.
When they are colored, transfer them to a plate and continue cooking until all the zucchini are done.
Let them cool and, in the meantime, prepare the filling.
In a bowl, work the ricotta with the nutmeg, salt, and the zest of the lime, well washed and dried, using a fork.
Spread a thin layer of filling on each zucchini slice.
Roll them up and repeat until all ingredients are used.
