Richbond, or snowball Cookies in English or boules de neige in French and Kwirat Tlj in Moroccan Arabic, are vanilla-flavored cookies dipped in apricot jam scented with orange blossom water and then rolled in coconut.
These cookies were particularly popular several decades ago, and are also known by other names, including Meshimisha, a tiny apricot, and Helwat Richbond, in reference to the cookie’s texture, which is comparable to the filling products from the Richbond company in Casablanca.
Best prepared the day before being eaten.

Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 2 eggs
- 2/3 cup vegetable oil
- 7/8 cup apricot jam
- 5 tbsps orange blossom water
- 2 1/4 cups grated coconut
- 3/4 cup sugar
Steps
Mix the flour with the baking powder.
Combine the eggs, sugar, and oil. Mix, then add, 2 tablespoons at a time, the flour and baking powder mixture.
Form into balls.
Bake in the oven at 356°F for 12 minutes.
Heat the apricot jam with the orange blossom water.
If you decide to make them small, dip the cookies in the hot jam and then join them two by two, if you make them large, you can leave them separate.
Roll in the grated coconut.
