The CARLOTA DE LIMÓN (from the French charlotte), is a French-origin dessert characterized by a sponge cake or biscuit base, requires no baking, and is served cold.

In Mexico City, this dessert is often simply called postre de limón.

Also called “frozen cake,” it is a reinterpretation of a traditional Charlotte, easier to create for the average homemaker.

The carlota de limón became popular in the 1930s and 1940s when home freezers became accessible to many families.

Just as ladyfingers, sponge cake, or even stale bread dipped in butter have been used since the 1800s, galletas (biscuits) Marías are more common today in a Mexican carlota.

It is usually presented in a glass container, where biscuits are alternated with a cream made of condensed milk, evaporated milk, and lemon juice.

But evaporated milk (fresh milk that has been reduced by about 60% water) is hard to find in Italy (unless online) and can be substituted with powdered milk added to water.

  • 1 Can evaporated milk
  • 397 g condensed milk
  • 4 lemons (or 6 limes)

Steps

  • Prepare the cream by blending the condensed milk with evaporated milk and the juice of four lemons until a homogeneous cream is obtained.

  • Assemble the dessert by placing a layer of biscuits and a layer of cream, repeating the operation two more times.

  • Arrange the biscuits also on the sides and decorate with two lemon slices.

    Place in the fridge for at least three hours before serving.

Biscuits Marias generally round in shape, with the name embossed on the top surface, along with a decoration running along the edge, made with wheat flour, sugar, vegetable oil, often flavored with vanilla.
