Air Fryer Marinated Salmon with Purple Carrots

Marinated Salmon cooked in an air fryer with purple carrots, a very quick and simple recipe to make.

This recipe only takes a few minutes, it’s perfect during Lent, ideal for portioning out, and even in summer when the temperatures get more oppressive and the desire for something tasty and light takes over.

You can replace the purple carrots with the classic orange ones or the yellow ones. Sliced into rounds, they will cook in the same time as the salmon.

You can leave the skin on before cooking or remove it at the end before serving.

Below I leave you my very first recipe with the air fryer, and guess what?

It’s the carrots!

Ingredients

  • 1 fillet salmon
  • 1 teaspoon chives
  • 1 pinch fine salt
  • 2 tablespoons extra virgin olive oil (plus one tablespoon for the carrots.)
  • 1 pinch pepper (freshly ground.)

Tools

  • 1 Bowl
  • 1 Parchment paper
  • 1 Air fryer

Steps

  • To make the air fryer marinated salmon, place the salmon fillet, cut in half, in a bowl and drizzle with two tablespoons of extra virgin olive oil.

    Add the chives, fine salt, and freshly ground pepper if possible.

    Mix and let marinate for 15 minutes.

  • Meanwhile, peel the selected carrots, removing the ends and skin, and slice them into rounds.

    In the air fryer basket lined with parchment paper, place the carrots, the salmon fillet, and the salmon marinade.

    Add a tablespoon of oil to drizzle over the carrots and place the basket in the air fryer.

  • Cook at 350°F for 12 minutes, turning the carrots and the salmon fillet halfway through the cooking time.

    Serve hot.

    Air Fryer Marinated Salmon with Purple Carrots

You can prepare the salmon in advance by marinating it in the refrigerator for up to 36 hours in a bowl covered with plastic wrap.

If you want to omit the carrots, you can add a nice and tasty iceberg lettuce salad as a side dish, perhaps accompanied by a yogurt sauce.
