Today I suggest a healthy, tasty and visually appealing idea to bring to the table in just a few minutes: Spinach and Egg Nests in the air fryer.
A complete, nutrient-rich dish, ideal for a savory breakfast, a brunch, a light lunch or dinner that’s full of flavor.
The air fryer allows you to get an even golden cook without the need for excess oil: the result is a light but irresistible dish, with slightly crisped spinach and a creamy egg yolk in the center.

Making eggs in the air fryer is really convenient — just keep an eye on the cooking if it’s your first time, as times may vary by a few minutes from one air fryer to another.

For this Spinach and Egg Nests recipe I wanted the spinach slightly crisp before adding the egg, but if you prefer and want to speed things up you can skip this step and cook the nests with the eggs right away. You can also prepare them with leftover spinach from the day before — a great, tasty way to reuse leftovers without much effort.

Ingredients for 2 servings of Spinach Nests with Eggs in the Air Fryer

  • 12 cups fresh spinach (about 350 g)
  • 1 clove garlic
  • to taste extra virgin olive oil
  • 2 tbsp Grana Padano, grated
  • to taste salt
  • to taste pepper
  • to taste nutmeg

Steps

How to prepare Spinach Nests with Eggs in the Air Fryer

  • After thoroughly washing the spinach, put it in a large pan with one clove of garlic and a drizzle of extra virgin olive oil. Cover with a lid and let it wilt over medium heat, stirring a couple of times. This will only take a few minutes.

  • Remove the garlic clove, drain the spinach and squeeze out the excess cooking water.

  • Transfer the spinach to a bowl and chop it with scissors or, if you prefer, on a cutting board with a knife.

  • Add salt, pepper, grated Grana Padano or Parmesan and nutmeg to taste.

  • Mix with a spoon to combine the ingredients well.

  • Take a non-stick baking tray, lightly grease it with a little extra virgin olive oil and form two mounds with the spinach. Use the back of a spoon to make an indentation and help shape the edges with your hands. Give a few spritzes of oil.

  • Insert the tray and cook the spinach nests for 10 minutes at 392°F in the air fryer.

  • At the end of cooking, remove the tray and place an egg in the center of each nest.

  • Return the tray to the air fryer and now cook at 356°F for about 7–8 minutes, until the egg white has set but the yolk remains soft.

  • With the help of a wooden or silicone spatula, gently transfer the nests to a plate. Season with salt and sprinkle with pepper to taste.

  • Now enjoy the spinach nests with eggs… make sure you have plenty of bread to dip in the yolk 😋

Tips and variations

If you use frozen spinach, be sure to thaw and squeeze it very well to avoid releasing too much water during cooking.

You can add a slice of pancetta or cooked ham to make them even tastier before adding the egg.

If you prefer soft spinach you can skip the initial sauté step and place the egg in the center right away, then cook directly at 356°F for 7–8 minutes.

If you don’t have an air fryer you can prepare the spinach and egg nests in a pan covered with a lid.
