Ingredients

  • 1 eggplant (large)
  • to taste extra virgin olive oil
  • to taste salt
  • 3.5 oz scamorza
  • 3.5 oz cooked ham (in slices)
  • to taste tomato sauce
  • to taste basil
  • 3.5 oz mozzarella

Steps

  • To prepare the baked eggplants stuffed with ham and cheese, start by washing and drying the eggplants and slicing them lengthwise into thin slices about 0.4 inches thick.

    Place the eggplant slices on a baking sheet lined with parchment paper, lightly oil them on both sides, and bake in the oven at 375°F for about 15 minutes or in the air fryer at 355°F for 10 minutes.

  • Meanwhile, prepare the topping by placing the tomato sauce in a bowl with oil, salt, and basil, and mix to flavor.

    Cut the scamorza into thin slices and chop the mozzarella.

    Once the eggplants are precooked, top them with the flavored tomato sauce, a couple of slices of scamorza, cooked ham, and finish with a bit of chopped mozzarella.

    Proceed this way with all the eggplants.

  • Cook the stuffed eggplants in a preheated ventilated oven at 375°F for 15 minutes, or in the air fryer at 355°F for 10 minutes.

    Once cooked, serve the stretchy eggplants, and you’ll experience an amazing taste!
