Ingredients

  • 3 eggs
  • 3.5 oz sugar
  • 1 cup milk
  • 1 lemon zest
  • 1 cup all-purpose flour
  • 12 oz berries (blackberries, raspberries, blueberries)
  • to taste powdered sugar (for decoration)

Steps

  • To prepare the berry clafoutis, start by making the batter. In a bowl, place the eggs with the sugar and work the ingredients with an electric whisk until you have a frothy mixture.

    Then, slowly pour in the milk while continuing to work with the whisk.

  • Add the grated lemon zest, mix, and finally sift in the flour. Then, continue mixing with the whisk to achieve a smooth, lump-free batter.

    Take the berries, wash them, and gently dry them with paper towels.

    Line the bottom of the pan with parchment paper, spread the berries evenly over it. If they are moist, lightly coat them in powdered sugar first.

  • Pour the batter over the berries in the pan, level the liquid well, and bake immediately in a static oven preheated to 350°F for about 35-40 minutes.

    Once the clafoutis is cooked, let it cool completely in its pan. When serving, cover it with powdered sugar.

The clafoutis keeps for up to four days, from the second day in the fridge. If you make it during the summer, store it in the fridge from the first day if you don’t consume it all immediately.

You can add other fruits if you like.

You can substitute milk with a plant-based beverage, oat milk, rice milk, or soy milk, in the same amount.
