The COLD PASTA WITH ZUCCHINI, ARUGULA, AND SALMON with VIDEO RECIPE is an easy, quick, and tasty summer main course with appetizing flavors; you prepare it in the pasta cooking time and it’s ready in 10-15 minutes!

I often make it when I crave a delicious pasta dish but have little desire or time to stay in the kitchen. The cold pasta with zucchini, arugula, and salmon is also perfect to take to the beach, to put in the picnic basket for a day trip.

The tasty dressing of salmon, arugula, and zucchini makes the pasta a rich dish, perfect also as a one-dish meal. I used some good wild smoked salmon with a more intense flavor and a more pronounced smoky aftertaste that made a difference in the final result.

Ingredients

  • 13 oz pasta
  • 3 zucchini
  • to taste arugula
  • 5 oz smoked salmon
  • to taste extra virgin olive oil
  • to taste salt
  • to taste mixed herbs

Steps

  • Start by cooking the pasta in plenty of salted boiling water. Meanwhile, wash the zucchini, trim them, and slice them into thin rounds. Season with oil, salt, and oregano if you like. Cook the zucchini either in a pan or in an air fryer at 383°F for about 10 minutes.

  • Meanwhile, if the pasta is cooked, drain it, transfer it to a baking dish, and dress it with extra virgin olive oil, stirring a few times to cool it down.

    Chop the arugula and flake the salmon.

    Dress the pasta with the cooked zucchini, mix, also add the arugula and salmon, and give it a good stir. Optionally add herbs like chopped basil and parsley. Serve the pasta with cold and tasty salmon, arugula, and zucchini, you’ll be amazed by how good it is!
