I chose the delicious Vignola IGP cherries purchased at the MD supermarket in my area, cherries with an unmistakable color and taste, sweet flavor, and crunchy, juicy pulp.

Ingredients
- 18 oz ricotta
- 2 tablespoons powdered sugar
- 5 oz dry biscuits
- 1 tablespoon water
- 18 oz Vignola IGP cherries (ripe, juicy but firm)
Steps
Start by preparing the ricotta cream. In a bowl, add the ricotta, keeping one tablespoon aside, and soften it with a spatula. Add the powdered sugar and mix until smooth, creamy, and homogeneous.
Put the cream in the fridge until use.
Now prepare the base for the cups. In a mixer jug, add the biscuits and blend them until powdered. Place them in a bowl with the tablespoon of water and the tablespoon of ricotta, and mix everything until you have a crumbly mixture. If needed, add another tablespoon of water.
With this biscuit mixture, make the bases in the cups, then distribute some biscuits on the bottom of each cup, compact with the back of a spoon, and place the ricotta cream on top, using a pastry bag if desired.
Take the Vignola IGP cherries, wash them, dry them, and remove the pits from all of them. Cut them into pieces and place them in the cups over the cream. Decorate as desired with a mint leaf, and here are our delicious and fresh cups with ricotta and cherries, delicious and very easy to prepare!
