Fragrant, easy, and delicious, these SOFT APPLE COOKIES have no butter in the dough and are so simple to make that you just need to mix all the ingredients in a bowl with a hand whisk or spatula. These oil-based cookies with apples in the dough are so good that they’ll disappear as soon as you make them, delicious homemade cookies that are simple and genuine, perfect for the family’s breakfast and snack time. I flavored the apple cookie dough with ground cinnamon; you can add grated orange or lemon zest, or even a vanilla bean if you like. Ingredients

  • 2 eggs
  • 120 g sugar
  • 1/2 cup sunflower oil
  • 2 3/4 cups all-purpose flour
  • 1 tbsp baking powder
  • 2 Golden apples
  • as needed powdered sugar
  • 2 tsp ground cinnamon

Steps

  • To prepare the soft apple cookies, start by placing the eggs and sugar in a bowl and mix them well with a hand whisk to combine. Pour the sunflower oil into the dough and continue to mix with the hand whisk.

  • Add the flour, baking powder, and ground cinnamon. I used two teaspoons of cinnamon, but you can use less or more; start mixing well with the whisk and then, once the dough becomes more compact, work it with a spatula until it forms a ball that detaches from the sides of the bowl.

  • Now that the dough is ready, take the apples, wash, dry, and peel them, then cut them into small cubes. Add the apple cubes to the dough, kneading with your hands. Take a baking sheet, line it with parchment paper, and then, with the help of two spoons, place dollops of dough on the sheet, slightly spaced apart, as they will expand while baking.

  • Once all the cookies are placed on the tray, bake them in a preheated static oven at 350°F for about 15-20 minutes. Once baked, let them cool and then cover them with powdered sugar.
