How delicious this pasta dish seasoned with a homemade walnut and mushroom sauce, you prepare the recipe in the cooking time of the pasta, so it’s a really quick and easy recipe, perfect for everyday but so good that it also goes great on the Sunday lunch table. I used champignon mushrooms to prepare the cream, but you can use any kind of mushrooms you want, according to your tastes. A very creamy and fragrant mushroom, walnut, and cream sauce excellent for dressing pasta but also for spreading on bread or enhancing your main dishes, like roasts and meatballs. Ingredients

  • 10.6 oz champignon mushrooms
  • 0.85 cup cooking cream
  • 2.8 oz walnut kernels
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic
  • to taste parsley
  • 15.5 oz pennette rigate

Steps

  • To prepare this delicious pasta with mushroom and walnut cream, start by boiling the water for the pasta. Meanwhile, clean the mushrooms, cut the bottom part of the stem, and slice them thinly. Pour the olive oil into a pan, add the peeled garlic clove, and when the oil is hot, add the mushrooms, also add salt, and cook with the lid on.

  • Once the mushrooms are cooked, put them in the blender jar with the walnuts, parsley, and half of the cream, and blend everything until you have a thick cream. Pour the mushroom and walnut cream into the pan and add the remaining cream, then mix. Cook the pasta, pour half a ladle of its cooking water into the pan with the mushroom cream, and mix to make it creamier.

  • Drain the pasta and then put it in the pan with the sauce, mix well, and finally add more fresh chopped parsley, and if you like, some chopped walnut kernels. Serve hot creamy mushroom and walnut pasta at the table, you’ll see what a success it is, and what an easy and delicious recipe!
