Ingredients
- 12 oz pearled farro
- 2 zucchini
- 5 oz smoked salmon
- 3.5 oz feta
- 12 cherry tomatoes (grape tomatoes are fine too)
- to taste extra virgin olive oil
- to taste salt
Instructions
Start by boiling the farro in plenty of salted boiling water, following the cooking times on the farro package. Once cooked, drain it and let it cool in a bowl by seasoning it with olive oil. Take the zucchini, wash, trim, and slice them thinly lengthwise using a mandoline or vegetable peeler.
Heat a grill and cook the zucchini slices until well grilled, then cut them into pieces. Also, cut the cherry tomatoes and feta into cubes. Chop the salmon as well. Season the farro with zucchini, cherry tomatoes, feta, and salmon, mix well, and optionally add some chopped fresh parsley and basil. Serve the farro salad, you’ll see how good it is!
