This SAVORY PIE WITH PHYLLO DOUGH WITH GORGONZOLA PEARS AND WALNUTS is something amazing, an easy recipe to use phyllo dough and create a savory pie with autumnal scents and flavors, because for me the pairing of pears and gorgonzola is so reminiscent of a dish for this season perfect to prepare and serve perhaps as an appetizer if you have guests for dinner. Crunchy outside, soft and creamy inside, serve with a bit of honey on top, it will be a great success at the table! The savory pie with phyllo dough filled with gorgonzola cheese, pears, and walnuts is easy and quick, you bake it in a few minutes, and it’s delicious hot but also cold. You can find phyllo dough in all supermarkets in the refrigerated section near puff pastry rolls, it’s also in rolls and unlike puff pastry, it doesn’t contain butter, it’s made of water, oil, and flour, which makes it perfect for recipes where the filling is more calorie-dense, like this one I’m proposing today.

Ingredients

  • 1 roll phyllo dough
  • as needed vegetable oil
  • as needed water
  • 2 pears (ripe but firm)
  • 2 eggs
  • 2 oz milk
  • as needed salt
  • as needed pepper
  • as needed walnut kernels
  • 3.5 oz gorgonzola
  • as needed

Steps

  • Take the roll of phyllo dough and unroll it, you will see that they are very thin sheets. Create an emulsion of water and vegetable oil, brush a sheet of dough with this emulsion using a kitchen brush, place another sheet on top and compact them well, fold into a closed fan and create a swirl with these first two sheets.

  • Place the swirl in the center of a baking pan lined with parchment paper.
    Proceed the same way with the other sheets, oil, pair, fold, and twist them around the first dough coil creating a swirl.
    Wash the pears, dry them, cut them in half, and slice them into thin slices. In a bowl, place the eggs, milk, salt, and pepper and mix with a fork. Pour this mixture on the base of the pie.

  • Add the pear slices, placing them between the spaces in the dough, sprinkle the gorgonzola scattered in chunks on the base, and lastly the broken walnut kernels.
    Bake the pie in a preheated ventilated oven at 375°F for about a half-hour, in an air fryer at 375°F for about 25 minutes.

    Once cooked, cover the pie with a little honey and serve at the table, delicious!
