Ingredients

  • 12 oz farro
  • 4 San Marzano tomatoes
  • 2 cucumbers
  • 1 Tropea onion
  • 3.5 oz feta (diced)
  • to taste fine salt
  • to taste extra virgin olive oil
  • to taste pepper (a few turns of the grinder)
  • 3.5 pitted olives

Steps

  • To prepare this beautiful and tasty farro salad, start by cooking the farro. Cook it in plenty of boiling water, drain it when cooked, and rinse under running water. Let it drain and cool completely.

  • In the meantime, cut the tomatoes into cubes, slice the cucumbers into slices or pieces, and thinly slice the onion. Place the farro in a bowl, season it with oil, salt, and pepper, then mix well to flavor it thoroughly. Add the vegetables, diced feta, and pitted olives, mix well, and serve at the table. If you like, you can add some chopped fresh basil.
