These LIME AND PINK PEPPER POTATOES are a delicious and easy recipe to cook potatoes without frying them. Ingredients

  • 2.2 lbs red potatoes
  • 1 lime (juice and zest)
  • 1 tbsp extra virgin olive oil
  • 2 tsps pink peppercorns
  • to taste fine salt

Steps

  • Start by washing and peeling the potatoes, slice them very thinly with a mandoline, they should be no more than 1/16 inch thick.

    Rinse them well under running water, place them in a bowl with ice water for half an hour.

  • In the meantime, prepare the dressing, crush the pepper with a mortar or use a grinder to grind it. Put the juice and grated zest of the lime in a bowl, add the pink pepper and extra virgin olive oil, and mix to create an emulsion.

    Take the potatoes out of the water and place them on a clean, dry cloth and dry them well.

  • In a large bowl, season the potatoes with the lime oil and pink pepper emulsion.

    Transfer the potatoes to the air fryer basket and cook at 392°F for about 15-18 minutes, giving them a good stir halfway through cooking. For oven cooking, place the potatoes on a baking tray lined with parchment paper, well distributed without overlapping, and bake in a preheated fan oven at 392°F for about 25 minutes.

    Once cooked, place them in a bowl and season with salt, mix and serve them hot and crispy, you’ll taste how good they are!
