No-Bake Strawberry and Ricotta Dessert

You know me well, I adore strawberries, and ricotta in desserts drives me crazy, so I prepared this delicious dessert that we enjoyed at home for a snack, prepared in just a few minutes, many delicious layers of cookies, strawberries, and ricotta cream.

The strawberry and ricotta dessert turned out even tastier and lighter because I used Pavesini Gli Originali, with only 9 calories per biscuit, they are spectacular as a base for fresh desserts, not just for tiramisu. I dipped them in the strawberry juice and they are really amazing with ricotta and chopped strawberries.

Ingredients

  • 17.6 oz ricotta
  • 0.5 cup vanilla powdered sugar
  • 17.6 oz strawberries
  • 3 tbsps granulated sugar (two are also fine)
  • as needed Pavesini Gli Originali

Steps

  • To prepare the strawberry and ricotta dessert, start with the strawberries. I recommend picking them ripe but firm, so wash them well and remove the stem. Then cut them into small pieces and put them in a bowl with the granulated sugar, mix and let the strawberries macerate for half an hour, allowing the strawberries to release their juice.

  • Meanwhile, prepare the ricotta cream. Take a bowl, put the ricotta and powdered sugar in it, and work everything with a spoon for a few minutes to get a soft and creamy ricotta cream.

  • Take the strawberries again, drain them from their juice, collecting it in a dish. Add a tablespoon of water, mix.

    Prepare the dessert, take a baking dish approximately 10 by 8 inches, make the first layer of Pavesini by dipping them in the strawberry juice, cover with a layer of ricotta cream and strawberries, make another layer of dipped Pavesini, ricotta cream, and strawberries. The dessert is ready, you can serve it immediately or put it in the fridge and enjoy it after a few hours.

You can also freeze it, I recommend freezing it in single servings.

For an even more delicious variant, you can use cocoa Pavesini.

In addition to strawberries, you can use other fresh seasonal fruits like berries, peaches, or pineapple.

You can flavor the dessert with some grated lemon zest.
