Ingredients

(for about 12 muffins if you use aluminum cups, for about 18 pieces if you use smaller paper ones):

  • 3 eggs
  • 5.6 oz sugar
  • 2 cups all-purpose flour
  • 1/2 cup plain natural yogurt (1 small jar)
  • 7 tbsp sunflower oil
  • 1 lemon zest (optional)
  • 1 packet baking powder
  • 2 Golden apples
  • as needed vanilla powdered sugar

Steps

  • In a large bowl, combine the three eggs with the sugar. Beat well with an electric mixer, or use a stand mixer if you have one, until you have a fluffy and pale mixture.

  • Next, add the oil and then the yogurt, mix well with the electric mixer. Also add the grated lemon zest, you can skip this if you like.

  • Sift the flour and baking powder together and incorporate them into the rest of the ingredients.

    Peel the two apples, cut them into cubes.

  • Pour the batter into the cups filling them two-thirds full, place the apple pieces on top, slightly push the apples into the batter with your fingers, and bake everything in a preheated static oven at 350 degrees Fahrenheit for about 20 minutes.

  • Once cooked, let them cool and then generously sprinkle them with powdered sugar. Here they are, ready to enjoy, the yogurt and apple muffins without butter, soft and delicious!
