The APPLE, RICOTTA, AND CINNAMON CAKE is one of my favorite butter-free apple desserts, a creamy and cinnamon-scented apple cake. It’s delicious at any time of the day, from breakfast to snack time. If you also love ricotta desserts, you absolutely have to try this apple cake! It’s ready to bake in just a few minutes, and the smell of cinnamon is amazing; cinnamon in apple cakes really works well, and once baked, you have a creamy, fragrant cake packed with apples. It’s perfect to serve as a dessert after meals too, perhaps with a scoop of ice cream or a dollop of whipped cream. At home, the apple, ricotta, and cinnamon cake was a big hit; my kids and husband devoured it for breakfast and snack. Ingredients

  • 17.6 oz ricotta
  • 3/4 cup sugar
  • 1 egg
  • 7 tbsp milk
  • 3/4 cup cornstarch
  • 2 teaspoons baking powder
  • 1 tablespoon ground cinnamon
  • 3 apples

Steps

  • Making the apple, ricotta, and cinnamon cake is very easy. Place the ricotta, egg, and sugar in a bowl, and mix it all together using a hand whisk or electric beaters.

  • Pour in the milk, add the cinnamon, and mix again. Add the sifted cornstarch and baking powder and give it one last mix until you have a smooth and well-combined batter.

  • Take the apples, wash, dry, peel, and cut them into 0.4-inch cubes. Put half of the apples into the batter and mix.

  • Pour everything into a baking pan lined with parchment paper, level it, and place the remaining apples over the entire top. Bake immediately in a preheated static oven at 320°F for about 40-50 minutes, remembering that cooking times may vary slightly from oven to oven.

  • Once the ricotta and apple cake is baked, let it cool in its mold. When serving, optionally sprinkle with some powdered sugar.

The cake can be stored in the refrigerator for up to four days. Place it under a cake dome or cover it with plastic wrap on a plate.

You can replace apples with pears or other fruits.

You can add chopped walnuts to the batter for a more rustic cake.
