Quick, tasty, and super easy, AIR FRYER GRILLED EGGPLANTS are flavored with a rich and aromatic dressing. Here’s how to cook eggplants in an air fryer to make them grilled. Grilled eggplants are a delicious summer dish, and you can serve them as an appetizer, side dish, or use them to flavor summer main courses like rice or cold pasta salads.
The air fryer is really saving me these hot summer days. In little time and without turning on the oven or stove, I can prepare delicious dishes. I can’t resist grilled eggplants, but just the thought of turning on the stove and heating the cast iron grill and standing in front of the heat grilling the eggplants made me want to not make them. So I tried cooking eggplants in the air fryer, and they were ready to season in no time. I prepared the dressing while the eggplants were cooking, so in ten minutes, I had prepared and seasoned the grilled eggplants! I brought them to the table in no time! Nobody noticed they were cooked in an air fryer, so taste test passed! Ingredients

  • 1 large eggplant (if small, two)
  • 1 bunch parsley
  • 1 bunch basil
  • 1 bunch basil
  • 1 clove garlic
  • 1 chili pepper (if you like)
  • to taste extra virgin olive oil

Steps

  • Start by washing the eggplant. I used a large one; if yours is small, use two. Dry it and then slice it on a cutting board into slices about 3/8 inch thick, no more.

  • Take the air fryer’s basket and place a first layer of eggplants. Now, with a kitchen brush or an oil sprayer, lightly oil the slices, then make other layers, always oiling them.

  • Cook the eggplants in the air fryer at 392 degrees Fahrenheit for 8 minutes. My fryer took this time; yours might take an extra minute.

  • Meanwhile, prepare the dressing by placing basil, parsley, mint, peeled garlic, chili pepper, salt, and oil in the mixer. Blend everything for a few seconds.

  • Remove the eggplants from the air fryer, place them on a plate, and pour the dressing on top, using a spoon. The grilled eggplants are ready to serve, see, easy, quick, and delicious!
