Ingredients for the CREAMY STRAWBERRY AND MASCARPONE CAKE

  • 17.6 oz mascarpone
  • 2/3 cup sugar
  • 3 eggs
  • 1 lemon zest (grated)
  • 1 1/4 cup all-purpose flour
  • 8.8 oz strawberries (ripe but firm)

Steps

  • In a bowl, place the mascarpone and work it to make it creamy with a spatula. Add the sugar and work with electric whisks to obtain a creamy mixture.

  • Now add the three eggs, always mix with the electric whisks, also add the grated lemon zest and continue to mix the batter.

  • Also add the sifted flour, mix it well with the rest of the ingredients.

  • Wash the strawberries, remove the stem, and cut them into cubes, add them to the rest of the ingredients in the bowl.

  • Pour the batter into a mold lined with parchment paper, level it, and bake in a preheated static oven at 320 degrees Fahrenheit for about 45-50 minutes.

  • Once cooked, the cake will initially be more puffy, then it will settle down, let it cool completely before removing it from the mold. Once cooled, you can enjoy it as you like with vanilla icing sugar on top.

The strawberry and mascarpone cake, once cooked, can be stored in the fridge for up to three days, I do not recommend freezing it.

You can replace the strawberries with other fruits, such as raspberries, blueberries, blackberries, but also apples, pears, and if you want you can make it without fruit but with chocolate chips or add Nutella.
