The Hugo Spritz is a cocktail that is slightly alcoholic, created in 2005 in South Tyrol thanks to the idea of bartender Roland Gruber who wanted to create an alternative to the classic Spritz. The ingredients are very few, from the combination of elderflower syrup, soda, prosecco, fresh mint, and lemon slices comes one of the most loved appetizers of the summer; the aromatic and delicate taste makes it pleasantly refreshing yet at the same time elegant and sophisticated.
The original recipe created by Gruber included the use of lemon balm syrup but being hard to find, he decided to replace it with elderflower syrup. The Hugo became so popular that it quickly spread in Northern Italy and Europe.
Usually, Hugo has a very natural color that tends towards yellow. In the cocktail you see in the photo, I used homemade elderflower syrup, which is why you can notice a more intense color. The taste, thanks to the homemade syrup, is significantly better compared to versions made with industrial syrups. Gruber himself states that the success of his cocktail lies precisely in the freshness of the ingredients.
If you want to serve a light, aromatic, and lively appetizer, I recommend trying it, use a wine glass or a Mojito glass and enjoy it along with a tray of snacks.

Ingredients
- 5 oz prosecco
- 1 oz elderflower syrup (I use my homemade one)
- 1.5 oz sparkling water (or soda)
- to taste ice
- 1 sprig mint (fresh)
- 2 slices lemon
Tools
- 1 Glass for mojito or a wine glass
- 1 Set cocktail set
Procedure
Wash the mint sprig and pat it dry with a paper towel.
Place 3 or 4 mint leaves into the glass along with the elderflower syrup, gently muddle them so that they release their essential oil. Add a slice of lemon.
Pour in the prosecco and the soda (or sparkling water).
Fill the glass with ice cubes and stir gently.
Garnish with a slice of lemon and a sprig of fresh mint.
Your Hugo Spritz is ready to drink.
