Ingredients
- 1.75 cups rice (for rice salads)
- 1 organic lemon (juice and zest)
- 2 teaspoons capers in oil
- 8.5 oz tuna in oil (drained)
- to taste chopped parsley
- to taste black pepper (ground)
- to taste extra virgin olive oil
- to taste fine salt
Steps
To prepare cold rice with tuna and lemon, start by cooking the rice in plenty of boiling water, when it is cooked, drain it, rinse it under running water and then let it drain completely.
Wash and dry the lemon, squeeze the juice and put it with the oil in a small bowl, emulsify by adding the chopped parsley and a couple of turns of the pepper grinder. Chop the capers and add them to the dressing. Put the completely cooled and drained rice in a bowl, dress with the dressing and mix well. Also add the well-shredded tuna and mix again.
Add the salt, more fresh chopped parsley, grate the lemon zest and add this as well, mix well and serve the fragrant and delicious cold rice at the table!

Cold rice with canned tuna and lemon can be stored for two days in the fridge in an airtight container.
You can use mackerel instead of tuna.
If you like, you can also add some chili pepper.
