The Pan di Stelle cold crumble is made with just 4 ingredients, it is easy and quick and is the perfect summer cold cake for any occasion. You can enjoy it as a snack or for breakfast, but also make it as a cake to celebrate an important event.

With a fresh and delicious creamy heart of no-bake milk cream, this biscuit cold cake is loved by both adults and children. At my place, they devoured it and have already asked me to make it again!

Ingredients

  • 16 oz Pan di Stelle biscuits (or other cocoa biscuits)
  • 2/3 cup butter
  • to taste sugar sprinkles (optional)
  • 2/3 cup mascarpone
  • 3/8 cup condensed milk

Steps

  • Preparing the Pan di Stelle crumble is very simple, start by putting the biscuits into the bowl of a mixer or blender and reduce them to powder, then place them in a bowl. Melt the butter in a bain-marie or microwave and pour it into the bowl with the biscuits.

  • Mix well to combine the butter with the biscuit powder. Take a springform pan and line the base with parchment paper. Make the base of the crumble with half of the mixture, compacting well with the back of a spoon or your hands. Put in the fridge while you prepare the filling cream.

  • In a bowl, put the mascarpone, soften it by working it a little with a spoon, add the condensed milk and mix well. Take the cake base from the fridge and fill it with the cream, spreading it evenly over the entire base. Cover with the remaining mixture of crushed biscuits and butter, sprinkle with sugar sprinkles and refrigerate for at least a couple of hours. Once the resting time in the fridge is over, gently remove the ring from the mold and serve the cake at the table, delicious, crunchy outside with a fresh and delicious creamy heart!
