- 2.5 tbsp extra virgin olive oil
- 1 clove garlic
- 1 cup dry white wine
- to taste chili pepper (optional)
- 14 oz tomato puree (crushed tomatoes are also fine)
- to taste pitted olives
- 2 tsp capers
- to taste parsley

To cook this delicious dish of Campanian cuisine, start by thoroughly washing the baby octopus under running water; mine had already been cleaned by the fishmonger.
Peel the garlic clove and chop it. In a large pan, pour the oil and add the chopped garlic and chili pepper; you can choose to omit the chili if desired.
Add the baby octopus to the pan, stir to flavor, pour the white wine, and let it evaporate. Add the tomato puree, put in the olives, capers, and salt, give a good stir, cook over low heat with the lid on for about 50-60 minutes, stirring occasionally.
