LEMON MUFFIN INGREDIENTS

  • 2 3/4 cups all-purpose flour
  • 1 1/8 cups sugar
  • 1/3 cup vegetable oil
  • 2/3 cup milk
  • 2 eggs
  • 1 packet baking powder
  • 1 lemon (large, organic)
  • to taste sugar crystals

LEMON MUFFIN PREPARATION

Beat the eggs with the sugar with a whisk for a few minutes. Add the oil, lemon juice, and milk. Mix well to combine the ingredients.

  • Pour everything over the sifted flour and baking powder. Mix with a spoon or spatula to combine the batter.

  • Finally, add the grated lemon zest.

  • Place the paper liners in the designated muffin pan slots.

  • Fill each liner almost to the rim. Sprinkle with sugar crystals.

  • Bake the muffins in a preheated oven at 392°F for the first 7/8 minutes, then lower the temperature to 356°F and continue baking for about another 15 minutes, depending on your oven.

  • Check the internal doneness of the muffins with a toothpick.

You can also glaze them with a lemon glaze to enhance the intense flavor, making them even more moist and soft!
