The brookies are born from the combination of two American recipes: brownies and cookies. In a single bite, you can taste a delicious layer of fudgy brownie and a layer of chocolate chip cookies.

To make this recipe, you will need simple ingredients that are often found in the pantry or refrigerator: flour, eggs, sugar, butter, and chocolate.

Once ready and cooled, you can enjoy the brookies at breakfast or as a snack, perfect with a cup of milk!

Ingredients

  • 2 eggs
  • 2.8 oz sugar
  • 3.5 oz butter
  • 1 oz unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 2.5 oz all-purpose flour
  • 3.5 oz chocolate chips
  • 1 egg
  • 2.8 oz sugar
  • 3.5 oz sugar
  • 1 tsp vanilla extract
  • 6.7 oz all-purpose flour
  • Half tsp baking powder
  • Half tsp baking soda
  • 3.5 oz chocolate chips

Steps

  • To make the brookies, start by preparing the brownie mixture.

  • In a bowl, beat the melted butter with the sugar and cocoa; using a hand whisk or electric mixer. Mix until you get a smooth mixture.

  • Add the eggs and vanilla, mix a few more moments to incorporate them.

  • Finally, add the dry ingredients: the flour and chocolate chips, mix gently with a spatula to incorporate them.

  • Pour the brownie batter into a square baking pan (8×8 inches) lined with parchment paper. Spread the batter with a spatula and set aside.

  • Make the cookie dough. In a bowl, with the help of a mixer or whisk, mix the melted butter with the sugar for 1-2 minutes until you get a smooth mixture.

  • Add the egg and vanilla, mix for another 1 minute with a hand whisk.

  • Finish with the dry ingredients: flour, baking soda, baking powder, and chocolate chips.

  • Mix gently with a spatula until you get a smooth and soft dough.

  • Pour the cookie dough into the pan over the brownie batter. Spread gently with a spatula to completely cover the brownies.

  • Bake in the preheated oven at 356°F (180°C) for 30 minutes, or in the air fryer at 329°F (165°C) for 25 minutes.

  • Check the cooking with a toothpick or knife blade, it should come out with crumbs and not with liquid batter.

  • Let the brookies cool completely in the pan before removing them from the pan and placing them on a large plate. Cut the brookies with a large knife into 16 small equal pieces. Enjoy!
