I had wanted to try making these strawberry turnovers for a long time and as soon as the strawberries appeared, I experimented with them right away. Are they good? Let’s just say that in the span of 2 weeks, I already had to make them 3 times to satisfy my son… is that proof enough that they are truly delicious?
It was a bit difficult to choose the name in Italian: here in the Netherlands, these crispy pastry triangles are made with apples and cinnamon, the same filling as my Mini Sweet Strudels, and with strawberries, they are called aardbeienflappen. Difficult, right? The English name is easier: strawberry turnovers. Okay, end of the foreign language lesson!
Anyway, these strawberry turnovers are very easy to make, vegan, and super fast: a roll of puff pastry, some strawberries, very little sugar, and off in the oven. It will be my favorite treat all spring!

Ingredients
- 7 oz strawberries
- 1 package puff pastry (ensure it's vegan. Get the rectangular kind, usually about 8 oz)
- 2 tsp raw cane sugar (about 2 teaspoons)
- 1 tsp powdered sugar (for decoration)
- as needed lemon juice (optional)
- Total Points = 26.5 WW points
- Points per turnover = 4.5 WW points
Steps
Clean the strawberries and slice them. You can let them marinate with some lemon juice, but this step is not necessary.
Roll out the puff pastry and divide it into 6 equal pieces. Here in the Netherlands, I find it already cut into squares. With the whole rectangular one, you will get rectangles that you will need to slightly stretch with your fingertips to obtain squares: easier done than said!
Place some strawberries on each puff pastry square and fold them into triangles, using a fork to seal the edges well. Make two cuts on the top, moisten with a little water, and sprinkle raw cane sugar on top.
Alternatively, if you marinated the strawberries with lemon, you can use the marinade juice or even some orange juice. I’ve tried all these options, and they’re always delicious!
Preheat the oven to 350°F/390°F (slightly less for a convection oven). Place the strawberry turnovers on a baking sheet lined with parchment paper and bake for about 25-30 minutes. There’s no need to turn the triangles during baking. When they are golden brown on top and cooked underneath, remove the baking sheet from the oven and let the turnovers cool on a rack.

FAQ (Questions and Answers)
If you marinate the strawberries, drain them well before placing them on the puff pastry: if they’re too wet, they tend to open while baking! And with the leftover juice, you can flavor yogurt: delicious!
Can I prepare the turnovers in advance?
If I prepare them for guests, I bake them 2 or 3 hours before because the puff pastry tends to soften and lose its crispiness. For us, I make them even the day before and then reheat them for a few minutes at high temperature in the air fryer!
