Here is a vegan apple galette that is really indulgent yet light, perfect for treating yourself while on a diet. In fact, it is a type of tart known as a galette, a French variant with a thin base that becomes very crisp and is filled with either sweet or savory fillings.
It is baked directly on parchment paper and the dough edge is folded over the filling in an irregular way, giving this dessert a very rustic look — simple but visually appealing.
While a classic tart made with shortcrust pastry is high in calories, this version has fewer Weight Watchers points per slice. The apple filling itself is light, and I also used whole wheat flour and raw cane sugar. And of course cinnamon is optional, but it pairs perfectly with apples!
What can I say: this vegan apple galette turned out delicious. At home it was very well received and I often make it to bring to family and friends or to give as a gift: everyone is very satisfied. And nobody ever called it a diet dessert!

Ingredients
- 1 cup whole wheat flour
- 1 pinch salt
- 1 1/3 tbsp vegan butter (light)
- 1 1/2 tablespoon cold water (cold)
- 3 Royal Gala apples
- 1/2 lemon (juice only)
- 3 tbsp + 1/2 tsp raw cane sugar
- 2 tsp ground cinnamon (or more if you like)
- 1 tbsp plant-based milk (any unsweetened kind)
- 2 tbsp extra virgin olive oil
- Total WW points = 26 WW points
- Points per slice (divided into 6) = 4 WW points
- Points per slice (divided into 4) = 6 WW points

Steps
First wash and peel the apples, then quarter them, remove the core and slice them. Put the apple slices in a bowl with about one third of the sugar and cinnamon set aside for the recipe and add the juice of half a lemon. This will prevent the apples from turning brown.
Mix and set aside while you prepare the dough.
In another bowl mix the flour and salt, break the cold margarine from the fridge into pieces and start mixing initially with a fork. Also add the oil and continue mixing until the dough becomes sandy.
At this point pour in one tablespoon of cold water from the fridge and start kneading with your hands. Add a little more water only if necessary until the dough holds together. Work it by hand a bit more, then form a ball and flatten it slightly.
Before continuing, preheat the oven to 392°F. Place the dough on a sheet of parchment paper and with the rolling pin begin to roll it out into an, even if irregular, disc shape. The dough should be rolled as thin as possible. It isn’t hard but it takes a bit of patience and elbow grease — keep at it!
With this amount you can get a disc of about 11 inches. Transfer the parchment paper to the baking tray or a wide oven pan. Arrange the apple slices in the center of the dough leaving a couple of inches free all around the edge.
Now fold the dough edge over the apples very roughly, pressing the folds slightly to make them adhere well to each other. There will be apples remaining at the edges of the galette while the fruit in the center will remain uncovered.
Brush the dough edges with a little plant milk and sprinkle the remaining sugar and cinnamon over the edges and the fruit.
This is how the vegan apple galette looks before going into the oven. Even raw it looks very inviting!
Bake for about 40 minutes in the preheated oven at 392°F: the fruit in the center should be cooked and the apples on top caramelized and nicely colored, while the dough edge should appear golden and crisp.
Let the apple galette cool for at least 15-20 minutes before transferring it to the serving plate: first detach it from the parchment paper around the entire edge and then, with the help of a wide spatula, slide it from the parchment paper directly onto a flat plate. Now you can cut it into 6 portions and serve!
A slice looks really beautiful with the overlapping layers of apples. Not to mention the aroma that fills the house… Whether served at breakfast or for afternoon snack, it will surely bring good cheer!

This apple galette keeps for a few days at room temperature but the crust will tend to soften. I have never tried to freeze it since it never lasted that long, but I believe you can: divide it into slices first, wrap each slice in kitchen paper and then place in a freezer bag.

For breakfast you can have a slice worth 4 points accompanied by some plant-based yogurt, perhaps vanilla, to also add some protein to your first meal of the day.

For those with a bigger sweet tooth you can also divide the galette into 4 slices at 6 points each; it is an acceptable amount of points for a fruit-based treat, especially if you are also very active.
