
The tray of sandwiches is a quick and appetizing idea to prepare salty finger food appetizers rather speedy to offer as an appetizer to our guests at the table.
They are based on sandwich bread and this time I used square sliced bread from the Morato company, not the softer rectangular bread I use more often.
I prepared both rolls and real sandwiches using simple ingredients that we always have at home.
The sandwiches are colorful, appetizing, and very easy to prepare. They are the protagonists at cold buffets, summer aperitifs, and standing dinners with friends.

Prepare them in advance, arrange them on a nice tray, and you will impress everyone with minimal effort!

HOW TO KEEP THE SANDWICHES SOFT?
Sometimes the sliced bread tends to dry out when exposed to air, and our sandwiches will not be soft and enjoyable to taste. Therefore, my advice is to wrap them in a damp cloth and keep them in the refrigerator until serving.
HOW LONG DO THE SANDWICHES LAST?
The SANDWICHES should be stored in the refrigerator for a couple of days, covered with plastic wrap to protect them.
I am not giving you precise quantities for the soft and garnished sandwich sandwiches because you can adjust each filling according to your tastes, perhaps being generous with the herb cream cheese, smoked salmon, or tomato slices, and so on!

Ingredients
- 4 sandwich bread (4 squares)
- as needed ham (sliced)
- as needed spreadable cheese
- as needed black olives (pitted)
- 4 sandwich bread (squares)
- as needed tomatoes (sliced)
- as needed prosciutto
- as needed extra virgin olive oil
- as needed salt
- 4 sandwich bread (squares)
- as needed smoked salmon (long slices)
- as needed herb spreadable cheese
- 4 sandwich bread (squares)
- as needed mixed pickles
- as needed mayonnaise
- as needed parsley
When I have guests, I always prepare this tray of appetizers… Shall we make them together today?
Place a piece of plastic wrap on a work surface.
Arrange the slices of bread in rows of 2 side by side and flatten them a bit with a rolling pin.
Chop a generous tablespoon of pitted black olives in the mixer and mix it with about 200 grams of creamy cheese.
Spread the cream cheese with black olives on the bread and then place the slices of ham on top.
Now calmly roll up the filled slices to make rolls, seal them with the plastic wrap, and keep in the refrigerator until you eat them.
Wash and slice the tomato and season it with a little extra virgin olive oil.
Place the square slice of bread on a plate, then arrange the slices of prosciutto on top, followed by the tomato.
Make layers alternating the ingredients and cut into rectangular sandwiches.
Cover with plastic wrap until ready to serve at the table.
For the sandwich bread rolls with smoked salmon, first place a piece of plastic wrap on a surface.
Arrange the slices of salmon in a rectangular shape.
Now cover the fish with sandwich bread, making 2 rows of 2 squares each.
Spread the sliced bread with herb cream cheese: if you can’t find it in the store, just make a fine chop of herbs like parsley or basil and mix it with a package of basic cream cheese!
Roll up these ingredients like a log and leave everything in the refrigerator until it’s time to go to the table.
For the pickle sandwiches, place the first square slice of sandwich bread on a surface and flatten it with a rolling pin.
Drain and dry a couple of tablespoons of mixed pickles from the preserving liquid.
Chop them with a knife or mixer without turning them into mush and mix them with mayonnaise.
Spread the sliced bread with this creamy sauce, making layers, alternating with the bread.
Garnish with a fresh parsley leaf.
Cover with food wrap and store in the refrigerator until mealtime.
Just before serving, make rolls and slices, fill the tray with sandwiches, and serve at the table.!
