Ingredients
- to taste celery
- to taste robiola cheese
- to taste salmon roe
- to taste extra virgin olive oil
- to taste salt and pepper
- to taste Abate pear slices
- to taste sweet gorgonzola (creamy)
- to taste cooking cream (optional)
- to taste arugula
- to taste prosciutto crudo
- to taste emmental (or Gruyère)
- to taste sun-dried tomatoes in oil
- to taste basil
- to taste small buffalo mozzarella balls
- to taste speck
- to taste thyme
- to taste extra virgin olive oil
- to taste salt and pepper
FOR THE PREPARATION OF THE RECIPE 4 COLD APPETIZERS READY IN 10 MINUTES
Remove the strings from the celery and cut it into small pieces.
Put the robiola in a bowl and season it with salt, pepper and a splash of EVOO, mixing the mixture well.
Dry the vegetable pieces and fill them using a spoon or a piping bag with the seasoned cheese.
Add some salmon roe and keep the appetizer covered with plastic wrap in the refrigerator until serving.
Wash the Abate pear and cut it into slices, removing seeds and core.
Make the gorgonzola creamy with a very small amount of cream, then fill the hollow of the pear.
Place 1/2 arugula stem and wrap each fruit slice with prosciutto crudo.
Here is the second cold appetizer ready; as always cover with plastic wrap and keep in the refrigerator until serving.
Faster than fast… just cut cubes of emmental or Gruyère about 3/4 x 3/4 inches, place on top a slice of sun-dried tomato in oil well dried and patted with kitchen paper, add a fresh basil leaf and … voilà!!
Guess what? Always cover with plastic wrap and …. ^_^!
Drain and dry the small buffalo mozzarella balls from their preserving whey.
Wrap each one in a half slice of speck and skewer it with a toothpick.
Prepare a dressing made with EVOO, salt, pepper, a few thyme leaves and drizzle the mozzarella to flavor them.
Plastic wrap and refrigerator until the moment to set the table and prepare the various plates for the savory buffet with 4 cold appetizers ready in 10 minutes.
