- 3.3 lbs mussels (cleaned)
- 1 clove garlic
- 1 lemon
- 2 tbsps extra virgin olive oil (2/3.)
- to taste fresh parsley (chopped)

FOR PREPARING THE PEPPERED MUSSELS RECIPE
Personally, I always
have the mussels cleaned by the fishmonger who puts them in that
particular machine, but at home, before starting any
recipe, I always check that there are no encrustations on the shells or
that any beard protrudes from the closed shells.In a large pot, put the Evo oil and the garlic clove, letting it sauté for a few minutes.
Add the mussels and season with salt and pepper, shaking the pan to flavor the seafood well.
Cover with the lid and continue cooking for about 5 minutes.
Discard any closed mussels and serve the peppered mussels with chopped parsley and a sprinkle of lemon juice.
