This type of meat is an excellent alternative to chicken and definitely, in my opinion, a better meat.

Ingredients for making Hunter-style Rabbit
- 1 Rabbit cut into pieces, about 2.2 lbs
- 2 cloves Garlic
- to taste Whole Peppercorns
- 1 Package of oven-dried black olives
- to taste Salt
- 2 tablespoons Terralcantara extra virgin olive oil
Preparation of Hunter-style Rabbit
Take the rabbit pieces, wash them under running water, drain, and place them in a bowl. Cover them with white wine and let them rest for at least 1 hour in the fridge.
When it’s time to cook the rabbit, drain it (saving a cup of liquid, which might be needed during cooking) and transfer it to a high-edged pan. Add the garlic cloves, salt, whole peppercorns, oven-dried black olives, the extra virgin olive oil, and mix well so that all the ingredients incorporate.
Turn on the gas over medium heat and cook covered for at least 40-45 minutes, stirring occasionally.
Add the saved liquid if it dries out too much!!!
When almost done, remove the lid and let it brown slightly.
Plate and serve.
