Certainly, not everyone loves this ingredient on pizza, but I invite you to try it at least once.
I season the onion with salt and then let it drain for a bit, and this way the onion gets flavored while losing water, so when baking, it won’t stay too soggy, and you’ll have a fantastic pizza… if you thought that before making onion pizza this way, I wouldn’t dare!!!
What do you think? Have I piqued your curiosity enough to make it at home for your family?

- 0.8 cups All-purpose flour

Preparation of the White Pizza with Onion
First, dissolve the fresh yeast in warm water, add a bit of all-purpose flour, then the salt, oil, and continue adding the rest of the flour, including the Manitoba flour, mixing until you obtain a compact, non-sticky dough.
Let it rise in a warm, covered place for at least 2 hours.
In the meantime, slice the onions into julienne strips and mix in a bowl with a scant tablespoon of salt, leave in the bowl for at least 30 minutes, then drain them in a colander for about an hour.
Once risen, place it on a floured work surface and knead until you get a non-sticky ball.
Divide into two balls and let rise for another hour.
After the time has passed, roll out the pizzas and place them in two greased pans and brush the pizza crusts with the available extra virgin olive oil, then top with the onion evenly without adding salt, it will be flavorful enough.
Let rest for 15 minutes, then bake in a preheated oven at 482°F for about 15 minutes.
Remove from oven and serve hot.
