- 3 large zucchini (about 1 lb)
- 12 oz sausage meat
- 2 medium eggs
- 2 1/2 cups breadcrumbs
- 1 tbsp extra virgin olive oil
- a pinch of salt

Let’s start making the stuffed zucchini delights!
Take the zucchini, wash them, and cut off the ends, then cut each zucchini in half (not lengthwise), scoop out the inside with a melon baller and discard the pulp.
Take the sausage meat and with your hands fill the zucchini with meat until all are filled, then cut them into slices about 1/4 inch thick

Take a baking tray, line it with baking paper, drizzle some olive oil and place the zucchini on it, then drizzle a little more oil on top of the zucchini and lightly salt.
