Snow peas in a water bath are another preserve to prepare during this period to have them during the winter.

Snow peas in a water bath are simple to make and especially convenient to have on hand for dinners during the period when this product is not available.
When needed, just open the jar, drain the water, and cook them. I put them in a pan with sauce and finish cooking this way, making an excellent side dish!

Preparation of Snow Peas in Water Bath
Sterilize the jars by washing them well with soap and rinsing, then boil them in a pot with water for a few minutes, then let them drain and use them.
Trim the ends of the snow peas, wash them well, drain, and place them in the jars vertically, filling the jar well, then add water up to about 2 inches from the rim.
Seal the jars with lids and boil them in a pot well covered with water for 45 minutes, counting the time from when the water starts to bubble.
When they have boiled for the indicated time, let them cool in the water without touching them; if we take them out, they will burst due to the outside impact at a lower temperature.
They can be stored like this for 1 to 2 years, depending on how well the vacuum is maintained.
When we need to use them, just open, drain the water from the jars, and use them as you wish, completing the cooking with a second boiling or in tomato sauce as I do.
