Tender Cake or Ferrara Cake

The Tender Cake or Ferrara Cake is a chocolate cake typical of the city of Ferrara.
The main ingredient of the cake is dark chocolate kneaded with eggs, butter, and flour.
Its peculiarity is that once baked, it will be characterized by a crust on top and a soft, creamy center.
In Ferrarese dialect, it was also called “Torta Taclenta,” which in Italian means sticky, precisely due to its very soft internal consistency that melts in the mouth.

Ingredients to Make the Tender Cake or Ferrara Cake

  • 4 egg yolks
  • 3 egg whites
  • 3/4 cup sugar
  • 3 tablespoons all-purpose flour
  • 10.6 oz 70% dark chocolate
  • 2 packets vanillin
  • 5.3 oz butter
  • 0.5 oz powdered sugar

Preparation of the Tender Cake or Ferrara Cake

  • First, melt the chocolate with the butter in a double boiler, separately in a mixer, blend the egg yolks with the sugar, flour, and vanillin, incorporating everything well.
    Add the chocolate and incorporate it well too.
    Separately, beat the egg whites until stiff and then add them to the mixture, mixing by hand so as not to deflate them.
    Butter and flour a cake pan with a diameter of 9-10 inches, pour the batter and place it in a preheated oven at 350°F for about 30-35 minutes, checking the cooking.

  • The optimal result should be that the cake has a crust on the outside and is moist inside.
    The cooking will be correct when the right crust has formed on the outside.
    Remove from the oven and let cool well, then sprinkle with powdered sugar and serve.
