Parsley Bread Swirls

The parsley bread swirls were a last-minute creation, on a morning when I wanted to bake some bread but with a bit of spice. That’s when they were born, my parsley bread swirls, which made it to the table just in time.
My husband coming back from work and my son from school… can we taste them? Yes, you can, but if I hadn’t taken them away, I wouldn’t have had any left!
I prepared them as a substitute for bread at the table, but they’re also great stuffed with cold cuts or cheese… I must say they’re good any way.
Just create a classic leavened dough to make a rectangle of dough and sprinkle it with chopped garlic and parsley, then roll it into a sausage shape to slice into pieces, let them rise again, and then bake… and the aroma will fill your home, delicious!!!

Ingredients for making the Parsley Bread Swirls

  • 1 1/4 cups water
  • 1/3 cup butter
  • 0.3 oz fresh yeast
  • 1/2 teaspoon sugar
  • 2 teaspoons salt
  • 1 1/2 tbsp extra virgin olive oil
  • 5 1/4 cups all-purpose flour
  • a bunch of fresh parsley
  • 4 cloves garlic
  • 1 Non-stick baking tray Non-stick baking tray

Preparation of the Parsley Bread Swirls

In the stand mixer, place the warm water, yeast and let it dissolve, then add the softened butter, sugar, extra virgin olive oil and 300 grams of flour, mix well for a minute, then add the salt and complete the dough with the remaining flour.

Create a dough ball and let it rise in a covered bowl for about 2 hours.

  • Meanwhile, chop the parsley and garlic and set aside.

  • Once risen, transfer the dough to a work surface, roll out a rectangular sheet not too thin

  • sprinkle with the chopped garlic and parsley, roll the dough on itself from the wider side to create a sausage.

    Shape the sausage well, then cut slices about 1 inch thick with a knife

  • Line a baking tray with parchment paper, place the bread swirls spaced apart, press them down slightly, and let them rise again for about 30-40 minutes.

  • Bake in a preheated oven at 392° F (200° C) for about 22-25 minutes, checking the cooking.
