Salted Cod Dressed Salad

Have you ever tried eating salted cod dressed salad? A typical recipe from many areas of Abruzzo and like all our dishes, you must try this recipe too.
I assure you it’s really excellent dressed with peppers, creating a truly unique flavor that you can’t say no to!!!
Just take already soaked salted cod, prepare roasted peppers, even though I always have some frozen ones on hand, dress everything and the recipe will be a guaranteed success.
It’s a dish that is eaten cold, so it’s great to take to the beach in summer, or to prepare in advance to have a super second course ready when it’s time to eat.
It can also be served as a second course with a side of potatoes, so it can be served comfortably even in winter.

Ingredients to Make Salted Cod Dressed Salad

  • 1.8 lbs Already Soaked Salted Cod
  • 4 tablespoons Extra Virgin Olive Oil
  • 3.5 oz Roasted Peppers
  • to taste Parsley
  • to taste Salt
  • 3 cloves Garlic

Preparation of Salted Cod Dressed Salad

  • Let’s prepare the salted cod dressed salad!

    Take the already soaked salted cod and after it’s been in water so that it doesn’t turn out too salty, take a deep baking dish and line it with parchment paper, place the salted cod, cover the dish with aluminum foil and bake at 464°F for about 20 minutes.

    After the time has passed, remove the foil and let it cook further until the cooking water has reduced.

    Once cooked, let it cool, fillet it, remove the bones and place it in the fridge for at least 30 minutes.

    Optionally, before cooking, you can also clean the bones and skin that come off easily and then complete everything after cooking.

    Take the cooled salted cod, add roasted peppers, and dress everything with extra virgin olive oil, chopped parsley, garlic, and salt.

    Mix well, plate, and serve.

    This product, dressed in this way, can be stored in the fridge for 2-3 days.
