The spiced flaky bread is somewhat different from classic bread, but I had in mind to make a flaky bread with some flavor. Initially, I wasn’t quite sure how the recipe would turn out, but fortunately, it exceeded my expectations.
Of course, being flaky, it’s not a light bread, but a bit caloric, though truly tasty and stays soft for days.
A dough based on pumpkin puree, an exceptional bread completed with a mix of spices.
I can’t urge you to make this bread just by looking at a photo; you must absolutely make it, try it, and realize its goodness.
I used my Croustina Panasonic bread machine to make the dough, but you can also use other bread machines or a stand mixer.

Ingredients to Make Spiced Flaky Bread
- 2 3/4 cups all-purpose flour
- 1 cup cup pumpkin puree
- 1 1/2 tsp fresh yeast
- 1/2 tsp sugar
- 4 tbsps sunflower oil
- 1/4 cup water
- 2/3 cup all-purpose flour
- 1/2 tsp dried oregano
- 1 tsp salt
- 5 tbsps sunflower oil
- 1 clove garlic (grated)
- 1 tsp dried mint
- 1 tbsp sesame seeds
- 1 tbsp extra virgin olive oil

Preparation of Spiced Flaky Bread
First, take the pumpkin, cut it into pieces (about 130 grams peeled raw), boil for a few minutes until soft.
Once cooked, drain it in a sieve with a bowl underneath to remove the water, then mash it in a small bowl to obtain puree and set aside.
Take the bread machine’s basket, insert the kneading blade, and first add the dry ingredients, the yeast, then the liquids, including the pumpkin puree.
Start the machine to knead the ingredients; on my bread machine, it’s button 17, leave it to knead for 20 minutes.
Once the dough is complete, pour it into a large container and let it rise for a couple of hours, covered with plastic wrap.
Once risen, transfer the dough to a work surface, divide it into 6 equal parts, and form 6 balls.
Let them rest for 15-20 minutes, then take each ball and roll it into a more or less square and very thin sheet.
Prepare a mixture in a small bowl by mixing all the ingredients for the layering to get a semi-dense solution but still easy to spread on the dough.
Using a kitchen brush, spread part of the spiced sauce on the square of dough, then fold one edge toward the center and the other over it to create a rectangle, then fold over lengthwise, wrapping 3 times to make a small rectangle.
Slightly stretch each rectangle with your hands, then place the dough pieces on a baking sheet well spaced apart and let rise for about an hour.
Brush the surface of the bread with oil, sprinkle with sesame seeds….
….and bake in a preheated oven at 392°F for about 20 minutes, checking the baking.
