Green Beans in a Water Bath

Green beans in a water bath is one of the many preserves I prepare in the summer as a stockpile for the winter.
Yes, there are many things I prepare to have genuine, untreated products even in winter. Sure, it sometimes involves a lot of work if you prepare several preserves, but it’s also nice to open the pantry in winter and find everything without having to settle for subpar and less genuine products.
I also prepare green beans in a water bath because my parents have a large garden, and I often use their harvest.
They are simple to make and especially handy to have on hand for dinners during the period when this product isn’t available.

  • round green beans

Preparation of Green Beans in a Water Bath

  • Take the jars that have been previously washed and sterilized… you can sterilize them by washing them well with soap, then boiling them in a pot with water for a few minutes, letting them drain, and using them.

    Trim the tips off the green beans, wash them well, and drain them.

    Fill the jars with the green beans, arranging them vertically inside the jars and filling them well, then fill them with water up to 1-2 fingers from the rim, seal them tightly with the lid, and place them in a large pot full of water (so that the jars remain well covered by the water) and boil them for 45 minutes, counting the time from when the water starts bubbling.

    Once they have boiled for the indicated time, let them cool in the water without touching them. If you take them out, they will burst due to the external impact at a lower temperature.

  • They can be stored this way for 1 to 2 years, depending on how well the vacuum is maintained.

    When we need to use them, simply open them, drain the water from the jars, place them in a pot to boil for a few minutes until the desired cooking time, then drain them well and season to taste.
