Quick Skillet Flatbreads

The quick skillet flatbreads, I made them by kneading everything with my faithful Croustina Panasonic bread machine which never disappoints me.
If you don’t have a bread machine, you can do it by hand or with a stand mixer and still get a good result.
I often cook small pizzas, focaccine with different doughs from each other, even if they all look very similar, but when tasting, you can distinguish the difference.
I often opt for skillet cooking, but you can easily bake them in the oven.
You will get very soft flatbreads and they can also be filled. I prepared them to serve at the table instead of the classic bread.

Ingredients to Make the Quick Skillet Flatbreads

  • 3 1/2 cups all-purpose flour
  • 1 3/4 cups semolina flour
  • 1 cup + 2 tbsp cups water (cold)
  • 7.5 oz whole milk (cold)
  • 0.21 oz fresh yeast
  • 0.46 oz salt
  • 0.63 oz butter

Preparation of Quick Skillet Flatbreads

  • Prepare the bread machine bucket by inserting the kneading blade, then add all dry ingredients placing salt and yeast on opposite sides.
    Next, pour in the wet ingredients including the butter without melting it.
    Insert the bucket into the machine and start the kneading program, in my machine it’s program 17 and lasts 45 minutes.
    Let knead for 20 minutes.
    Once kneaded, pour it into a large bowl, cover, and let rise for about 2 hours.

  • Once risen, pour the dough onto a floured work surface and create 11 balls weighing about 3.7 oz each.
    Cover them and let them rest for 30 minutes.
    After time has passed, heat a skillet with a thick bottom, flatten the first balls to create flatbreads and place them in the now hot skillet, setting the flame to medium-low and covering with the lid.
    I cooked 2 at a time, but it depends on the skillet’s capacity.
    They should cook for about 2-3 minutes per side.

  • Once cooked they will be delicious both hot and cold.
