Ingredients for making Pumpkin Bread with Bread Machine

  • 15 oz Pumpkin puree
  • 0.7 oz Fresh brewer's yeast
  • 0.63 cup Warm water
  • 2 tsps Heaped salt
  • 22.4 oz All-purpose flour + 0.7 oz for the work surface
  • 1 tbsp Re-milled durum wheat semolina

Preparation of Pumpkin Bread with Bread Machine

  • If you don’t already have pumpkin puree, cut the pumpkin into slices, removing the skin, place it on a baking sheet lined with parchment paper, and let it dehydrate at 302°F for at least 30 minutes or until soft.
    Once cooked, put it in the blender and puree it.
    In the bread machine’s basket, insert the pumpkin puree, brewer’s yeast, water, and flour, insert the basket into the machine, and program it for a dough-only cycle, for my machine it lasts 40 minutes.
    Turn on the machine, as soon as it starts kneading, add the salt and let it work.
    Once it has finished kneading, pour the dough onto a floured work surface…

  • …work it just enough to blend it well, then form a loaf.
    Place it on a baking sheet lined with parchment paper, dust it with semolina, then make diagonal cuts and let it rise for at least 2 hours.

  • Once risen, bake in a preheated oven at 428°F for about 20-25 minutes.
    Let it cool before slicing.
    Of course, you can also make this bread by kneading everything by hand or with a stand mixer, and you’ll still get a delicious bread.
