The plain pizza or simple pizza is a traditional product of Abruzzo cuisine, and its peculiarity is the lack of yeast in the dough.
The ingredients used are very simple, and the preparation is also very quick.
The appearance is between bread and a focaccia, it should not be filled or cut, it should strictly be torn by hand.
It is a pizza with a crispy and tasty surface and can be used instead of bread and eaten with salad, cheese, cold cuts, etc.
In some areas of Abruzzo, it is prepared for the feast of San Martino together with the new wine, which in many parts of Italy cannot be missed on the evening of November 11th.

Ingredients to make Plain Pizza or Simple Pizza
- 4 cups All-purpose flour
- 5 tbsp Extra virgin olive oil
- 1 tbsp Extra virgin olive oil (for baking)
- 1/3 cup Water
- 1/2 cup White wine (Cerasuolo or Trebbiano d'Abruzzo)
- 1 tsp Salt
- 1 tsp Optional baking soda
Preparation of Plain Pizza or Simple Pizza
Prepare a dough by combining all the ingredients and mixing well until obtaining a soft and compact ball.
Let the dough rest for 30 minutes covered.
Roll out the dough to create a disk 3/5 inch thick, grease a baking tray of about 9 1/2 inches in diameter, and place the dough disk there….
…..and score it with a knife to create squares (as shown in the photo) and brush the surface with the extra virgin olive oil.
Bake in a preheated oven at 392°F for about 30 minutes.
