Poppy Seed Bread

Poppy seed bread is a simple bread to make, with that extra touch of flavor that makes a difference.
For this dough, I was helped by my youngest son, whose big hands kneaded much better than me, because if you notice, when boys knead, they have warmer hands and the dough rises even better.
Apart from this, the reason I asked for help was that I wasn’t feeling at my best, but I wanted to make bread.
The outcome was truly excellent, my son was obviously very satisfied and I was happy that for once he listened to all my directions and the result was as it should be.
Unfortunately, boys at this age are a bit ‘know-it-all’ and it’s hard to get them to listen; they always know everything, and for him to admit that the bread was good because he listened to me was a defeat.

Ingredients to make Poppy Seed Bread

  • 1.7 cups Warm water
  • 0.42 oz Fresh yeast
  • 1.67 cups Manitoba flour
  • 3.75 cups All-purpose flour + 1/3 cup for the work surface
  • 1 and 1/2 teaspoons of salt
  • 1/2 teaspoon sugar
  • 1 tablespoon Extra virgin olive oil
  • as needed Poppy seeds
  • as needed Water

Preparation of Poppy Seed Bread

  • Make the dough in the mixer or in a large bowl by hand.

    In a large bowl, place the warm water with the fresh yeast and let it dissolve, add the sugar and the manitoba flour and mix well, add the salt, extra virgin olive oil, mix again and add the all-purpose flour completing the dough to obtain a homogeneous loaf.

    Transfer the dough onto a floured work surface and slightly stretch the dough making three folds on itself, repeating the operation 2 times.

    Finally, recreate a loaf and let it rise for about 2 hours, or until doubled in size.

    Once risen, take the dough again, working it on a floured surface, creating a loaf again

  • then lengthening it to obtain a sausage shape, slightly flattening and flouring it a bit.

    Transfer the bread onto a baking sheet lined with parchment paper and let it rise again for about 1 hour.

  • At this point, once it has risen, brush it with water and sprinkle with poppy seeds.

    Bake in a preheated oven at 464°F for about 25 minutes, checking for doneness.
