Chicken and zucchini burgers are a tasty idea for eating chicken. I have to say I improvised a bit, but the result was more than successful.
I decided to give them a burger shape, but you can make them round or round and then flatten them a bit by hand, in short, a bit to your taste.
In these kinds of preparations, I love to put parsley and garlic, I know the latter is not very popular with many, but I use a lot.
I cooked them in the oven, but they can also be fried… then I have a bit of a habit of not making the burgers too thick, obviously, if you make them thicker, there will be fewer and they may need to cook for about 2 more minutes.

Ingredients for Making Chicken and Zucchini Burgers
- 14 oz chicken breast (1/2 whole breast)
- 1 medium zucchini (about 6 oz)
- 1 egg (medium)
- 3/4 cup grated Parmesan cheese
- 2 cloves garlic
- 1 tsp salt
- 1 pinch pepper
- 1 bunch chopped parsley (or dried)
- 1/2 cup breadcrumbs
- 1/3 cup all-purpose flour
- 1/2 cup breadcrumbs
- 1 pinch salt
- 2 tbsps extra virgin olive oil (for cooking)

Preparation of Chicken and Zucchini Burgers
First, we need to have half a whole chicken breast frozen, in case we freeze it the day before making the burgers.
Half an hour before making the burgers, let the chicken thaw at room temperature just to make it easier to grate.
In a large bowl with a grater with wide but not too wide holes, grate the chicken, then wash the zucchini, remove the ends, and grate it as well.
Chop the parsley and garlic, add to the mixture, add the breadcrumbs, Parmesan cheese, salt, pepper, flour and work well with your hands until you get a well-blended mixture.
At this point, with the obtained mixture, make 16 balls or 14 if you want nice thick burgers, roll each ball in breadcrumbs, then flatten them with a mold to form the burgers, otherwise shape them by hand.
Roll the burgers again in breadcrumbs after shaping, then place them on a baking sheet lined with parchment paper, sprinkle with salt and drizzle with a little extra virgin olive oil.
Bake in a hot oven at 400°F for about 15 minutes checking the cooking.
