Super Soft Paradise Cake

The Paradise cake is a traditional Italian dessert, much loved for its softness and delicate taste.
This cake is very similar to sponge cake, but tastier and even lighter if we want.
Originating from Lombardy, particularly from the city of Pavia, this cake has won the hearts of many thanks to its soft texture and delicate taste.
The paradise cake was created in the second half of the 19th century by Enrico Vigoni, a pastry chef from Pavia.
Its fame quickly spread, making this dessert one of the classics of Italian pastry.
The name “paradise” was given for the heavenly taste that the cake offers, for that sensation of lightness and pleasure in tasting it.

Ingredients for Making the Super Soft Paradise Cake

  • 4 eggs (medium)
  • 1/2 cup all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup potato starch
  • 1 packet baking powder
  • 1 packet vanillin
  • grated zest of one lemon
  • 1 tbsp powdered sugar

Preparation of the Super Soft Paradise Cake

  • Beat the eggs separately, the yolks with the sugar and the egg whites until stiff.
    Combine the two mixtures by hand with a spatula, then add the sifted flour, potato starch, and all the remaining ingredients, mixing all the ingredients well, always by hand to prevent the mixture from deflating.

  • Then transfer the mixture to a buttered and floured cake pan about 10 inches in diameter.
    If you use a silicone mold like me, you will not need to butter and flour.

  • Bake in a preheated oven at 356°F for about 30 minutes, checking doneness.

    Let it cool and dust with powdered sugar before serving.
