I’ve thought of chicken meatballs in sauce together with my husband because lately we’ve all been on a diet, so chicken is the most cooked meat at my house, and I’ve used it to make meatballs before, but also combined with pork or beef.
The most important thing about this recipe is the cooking; you shouldn’t brown them before cooking them in the tomato, to prevent them from becoming a bit rubbery, it’s the best solution.
Chicken is lean and therefore suitable for diets, but you don’t have to give up taste.
Even kids will gladly eat them, give it a try!

Ingredients for Chicken Meatballs in Sauce
- 1.1 lbs Ground chicken (preferably thigh meat)
- 1 Small egg or yolk
- to taste Salt
- to taste Thyme
- 1 bunch Parsley
- 1 clove Large garlic
- 0.7 oz Grated Parmigiano Reggiano
- 1 oz Breadcrumbs
- 14 oz Canned whole peeled tomatoes
- to taste Salt
- to taste Parsley
- 1 tbsp Extra virgin olive oil
Preparation of Chicken Meatballs in Sauce
In a large bowl, mix the ground chicken, egg, minced garlic, salt, thyme, and chopped parsley with your hands.
Add the breadcrumbs, and if you find the meatballs do not form tightly enough when trying to shape them, add more breadcrumbs.
Form meatballs to your desired size, place them on a plate, and refrigerate for at least 30 minutes.
In the meantime, prepare the sauce by putting the tomatoes, salt, extra virgin olive oil, and chopped parsley in a pot with high sides, stir well and cook on medium heat. When the sauce begins to boil, add the meatballs, stir well, and cook for about 40 minutes, stirring occasionally and adding a little water if necessary.
